Sosua Chef service has a broad selection of appetizers, be it hot or cold. The catalog is so extensive, we will be adding new ones each week to keep the menu updated for years to come. Also called hors d'oeuvres ( French ) or starters, these small dishes are the perfect prelude to a blissful gourmet experience.
Beef Carpaccio
Beef Carpaccio is a dish made of raw meat ( also see fish Carpaccio ) thinly sliced or pounded. Served mainly as an appetizer. Some might confuse it with beef tartare, which is different in shape (tartare is cut in a small square of meat). Carpaccio is thinly sliced, then pounded to get a paper-thin consistency.
Bruschetta
Bruschetta is the preferred antipasto from Italy, done in many varieties. The classic type consists of grilled bread with garlic, topped with olive oil and salt. Might also include tomato, vegetables, cheese, ham and other cured meat. A Spanish variation, Tapas, extends its creativity beyond the Mediterranean cuisine.
Caesar Salad
A Caesar salad is considered one of the top sellers in restaurants, consisting of lettuce ( romaine ), croutons dressed in lemon juice, olive oil, egg, Worcestershire sauce, anchovies, garlic, Dijon mustard, parmesan cheese, and black pepper.
Croutons
A crouton is a basic staple of many menus, basically a piece of sautéed or rebaked break, cubed and seasoned. Used to add taste and texture to salads ( see Caesar salad ) and as accompaniment to soups and stews. As appetizer, is if also served made with garlic, and sliced in larger pieces.
Fish Carpaccio
Carpaccio made of fish is often made of Salmon and Tuna. A favorite appetizer in 5-star restaurants, this dish consists of thinly sliced, pounded fish meat served with Arugula( wild rocket plant ).
Fried Calamari
Fried Calamari ( squid ) is an entrée found in Mediterranean cuisine. This deep-fried squid is batter-coated, and takes less than two minutes to fry to avoid toughness. Usually served with lemon on the side.
Mozzarella Sticks
These elongated pieces of breaded mozzarella cheese are as delicious as they look on a picture. Mozzarella sticks can be served with tomato, ketchup, marinara sauce, and a a wide variety of other sauces. Ranch dressing, bbq sauce and honey mustard sauce are also some of the top choices to dip it into.
Onion Soup
French onion soup is usually based on meat stock and onions, served gratinéed with croutons and cheese on top. Some chefs add a large piece of bread on top and serve it on a rustic pottery bowl.
Pumpkin Soup
Pumpkin soup is a main stock of menus everywhere ( also called squash if made with squash instead ). It is usually prepared with garlic, onion, salt, thyme, garlic and peppercorns. The recipe varies with regions, though most will use pumpkin as the main ingredient.
Shrimp Cocktail
Shrimp cocktails are considered an exotic for parties. This seafood dish consists of shelled prawns (shrimp ) cooked, and served in a cocktail sauce. The sauce can vary according to each Chef`s and client specifications.
